Granola

I absolutely Love Love Love this granola recipe! Its really great to snack on and eat with coconut chia seed pudding, or simply with almond milk. It’s filling and fun combination of seeds, nuts and dried fruit.

Granola 

1 1/4 cup oats

1/2 cup walnuts

1/3 cup almonds

1/4 cup cashews

1/4 cup pumpkin seeds

1/2 cup dried flat coconut chips, unsweetened 

1/4 cranberries 

1/4 cup maple syrup

3 tbs coconut sugar

1/4 cup coconut oil

1/2 tsp sea salt 

Preheat the oven to 350 degrees Melt the coconut oil and Mix all ingredients except the cranberries in a large bowl. On a flat sheet tray lined with parchment paper, spread the granola on the tray and spread it as thin as you can. Bake in the oven for 20 minutes or until golden brown. If it isn’t golden brown after 20 minutes, bake for another 5. Lastly add the cranberries and mix well. 

 (If you buy coconut chips that are already lightly roasted, add it 5 minutes before taking out of oven)
