Granola

I absolutely Love this granola recipe! It’s really great to snack on and eat with coconut chia seed pudding, or simply with almond milk. It’s filling and fun combination of seeds, nuts and dried fruit.

Granola 

1 1/4 cup oats

1/2 cup walnuts

1/3 cup sliced almonds

1/4 cup cashews

1/4 cup pumpkin seeds

1/2 cup dried flat coconut chips, unsweetened 

1/4 cranberries 

1/4 cup maple syrup

1/4 cup coconut sugar

1/4 cup coconut oil

1/2 tsp sea salt 

Preheat the oven to 350 degrees. Roast the walnuts, pumpkin seeds and cashews for 7 minutes. Roast the almonds and coconut chips for 5 minutes. Melt the coconut oil and set aside. In a medium bowl add the oats, coconut oil, maple syrup, coconut sugar and salt. Mix well and on a flat sheet tray lined with parchment paper, spread the oats on the tray and spread it as thin as you can. Bake in the oven for 25 minutes. Let sit until cool, about 10 minutes. Transfer oats to a large bowl and add the walnuts, cashews, pumpkin seeds, almonds and cranberries and mix well.
