  • 3 cups fresh breadcrumbs ( I use panko, it gets too soggy when I use regular breadcrumbs)
  • 2 egg whites, beaten until foamy
  • 2 large egg yolks
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoons grated lemon peel
  • 1 1/2 teaspoons lemon zest
  • 1/4 cup mayonnaise
  • 1/4 cup minced roasted red peppers (jarred)
  • 10 tablespoons unsalted butter, divided
