Ingredients
  • 2 (15 oz.) cans of white beans (Great Northern or Cannellini), rinsed and drained
  • 2 carrots, peeled and chopped (about 1/2 c.)
  • 1 loaf french bread, cut into 1/2-inch slices
  • 2 sprigs fresh rosemary
  • 1 clove of garlic, minced (I grated mine on a microplane)
  • 5 c. low-sodium chicken broth
  • 4 T. olive oil
  • 1 small onion, diced
  • 3 oz. prosciutto, chopped
  • dash of red pepper flakes
  • salt & pepper
  • 1 bunch of fresh spinach, washed and stems removed
