- 1 pound medium-size shrimp, shell and head on, if possible (see Note)
- 8 magrut (also known as kaffir) lime leaves, torn into chunks
- 2-inch piece galangal, thinly sliced into 1/8 -inch rounds (see Note)
- 1 to 4 Thai chiles cut into 1/4-inch chunks, to taste
- 1/4 cup + 1 tablespoon Thai chile paste (see Note)
- 1/2 cup lime juice (about 3 limes)
- 1/4 cup Asian fish sauce
- 1 tablespoon sugar
