- 2 teaspoons Diamond Crystal kosher salt; for table salt, use half as much by volume
- 1 teaspoon ground red chile powder, such as Kashmiri
- 1 teaspoon ground turmeric
- 1 teaspoon homemade or store-bought garam masala
- 2 cups (240ml) cold water
- 1 large head cauliflower, about 1 1/2 pounds (680g), separated into bite-sized pieces, thick stems discarded
- 4 cups (946ml) vegetable oil, for frying
