Ingredients
- 12 small clams, rinsed well
- 3 stalks lemongrass
- 1 to 2 inches galangal (frozen is OK), thinly sliced (see "Where to buy")
- 1/2 small bunch cilantro
- 3 to 4 kaffir (magrut) lime leaves, if available
- 12 medium shrimp in shell
- 2 or more fresh green chiles, such as serrano, halved lengthwise
- 1/2 pound freshly grated coconut or frozen unsweetened grated coconut, thawed
- 1/2 pound Chinese egg noodles or fresh linguine
- 2 tablespoons Thai roasted chile paste in soybean oil (nam prik pow), available at ethnic markets
- 1 bunch green onions, white and pale green parts only, thinly sliced
- 2 to 3 tablespoons Thai or Vietnamese fish sauce
- 1 lime
