Ingredients
- 2-3 small to medium beets, preferably different colors (yellow and red), with healthy looking greens and stems, washed (beets should be scrubbed)
- 4 tablespoons olive oil for sautéing, plus more for rubbing the beets before roasting
- 1 small onion, diced
- 1 tablespoon butter
- 2 tablespoons white flour
- 1 cup whole milk, warmed in a microwave
- Pinch of nutmeg
- Salt & pepper to taste
