  • 2 tablespoons olive oil
  • 1/4 cup vegan mayonnaise
  • 1/2 teaspoon sea salt
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon vegan Worcestershire sauce
  • 1 tablespoon drained capers
  • 2 tablespoons nutritional yeast
  • 1 teaspoon Dijon mustard (optional; it's less traditional, but I think it makes for the best flavor)
  • Freshly ground black pepper
  • For the croutons:
  • 1/2 baguette, cut into 1-inch cubes (about 3-4 cups)
  • 1-2 tablespoons tablespoons olive oil (as needed)
  • 2 teaspoons finely minced garlic
  • Coarse salt and freshly grated black pepper
