- Kosher Salt
- 4 x fresh ginger section, in 1/4” slices
- 2 x green onion stalks, cut into 1″ sections - both the green and white parts
- 1 tsp Sesame Oil
- 2 tbsp vegetable oil
- 3 x FOR THE RICE: garlic cloves, finely minced
- 1 x ginger section, finely minced
- 2 cup long-grain uncooked rice, washed and soaked in cool water for 10 min or longer
- 2 cup reserved chicken poaching broth
- 1/2 tsp sesame oil
- 1 tsp kosher salt
- 1 tbsp FOR THE CHILI SAUCE: lime juice
- 2 tbsp reserved chicken poaching broth
- 2 tsp sugar
- 4 tbsp sriracha chili sauce
- 4 x garlic cloves
- 1 x ginger
- a generous pinch of salt, to taste
- 1/4 cup dark soy sauce
- Few sprigs cilantro
- 1 g cucumber, thinly sliced or cut into bite-sized chunks
