- 2 stalks celery, rough chop

- 2 tablespoons ketchup
- 2 tablespoons Creole mustard (or stone-ground mustard)
- 1/2 teaspoon Creole seasoning
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt, if desired
- 1/2 teaspoon your favorite hot sauce
- 3 eggs
- 2 cups milk
- One 8-ounce box seasoned panko breadcrumbs
- Two 12-ounce packages boudin links
- 6 small loaves French bread (or buns of choice)
- Mayonnaise or another sandwich spread, for serving
- 6 lettuce leaves, whole or sliced
- 1 ripe tomato, sliced
