- 1 cup fresh mint leaves
- 1 cup daikon sprouts, optional
- 1 cup English hothouse cucumber, cut into matchstick-size pieces
- 1 cup carrot, cut into matchstick-size pieces
- 12 small green or red lettuce leaves
