Ingredients
- Brisket:
- 1 fresh beef brisket, about 2 to 2 1/2 pounds (the fattier point cut, if possible)
- -- About 1/4 cup olive oil
- 1 medium onion, chopped
- 1 large carrot, peeled and chopped
- 3 celery ribs, chopped
- 4 garlic cloves, peeled and smashed
- 1 cup dry white wine
- 1/2 bunch thyme
- 1 cup chicken stock
- 1 large tomato, chopped
- -- Salt and pepper, to taste
- Cherry Tomato Conserva:
- 1 pint cherry tomatoes, rinsed and de-stemmed
- 3 tablespoons extra virgin olive oil + more to finish
- -- Salt and pepper to taste
- 4 thyme sprigs
- 3 garlic cloves, smashed
- 6 crusty French rolls, partially cut in half lengthwise
- 1 cup tender baby mustard greens or other peppery greens like arugula or watercress
