- For the chickpea croutons:
- 30 ounces canned Garbanzo beans (chickpeas)
- 2 tablespoons olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 dash hot sauce (optional)
- For the soup:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 shallot, chopped
- 2 garlic cloves, minced
- 1 teaspoon coriander seeds, freshly ground
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pieces medium-sized sweet potatoes, peeled and cubed
- 6 cups vegetable stock
- 1/4 cup fresh cilantro
