- 2 tablespoons raw rice
- 1 pound ground turkey
- 1 tablespoon vegetable oil

- 2-3 teaspoons chile sauce (Sambal Oelek or Sriracha)
- 1 teaspoon sugar
- 1 teaspoon ground galangal (or ginger)
- 1 tablespoon lemongrass paste (I use Gourmet Garden)
- 3 tablespoons lime juice
- 2 scallions, chopped
- 1 shallot, thinly sliced
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped mint
