Mincemeat Ice Cream
Ingredients
- 2 cups heavy whipping cream
- 2 cups whole milk
- 1 vanilla bean, split lengthwise
- 10 large egg yolks
- 1 1/2 cups sugar
- 2 Golden Delicious apples (about 1 1/3 pounds), peeled, cored, cut into 3/4-inch cubes
- 1 1/2 cups raisins
- 1 cup pecans, toasted, chopped
- 1 cup sugar
- 3 /4 cup apple cider
- 1 /4 cup Calvados (apple brandy)
- 1 /4 cup (1/2 stick) unsalted butter
- 2 1/2 tablespoons fresh lemon juice
- 1 cinnamon stick
- 1 teaspoon salt
- 1 /2 teaspoon ground nutmeg
- 1 /2 teaspoon ground cloves
- 1 /2 teaspoon finely grated lemon peel
