- Reduced-Butter Pie Pastry, (recipe follows)
- 3 tablespoons cold unsalted butter, cut into small pieces
- 6 cups thinly sliced peeled apples, (2 1/4 pounds), such as Northern Spy, Rhode Island Greening and/or Gravenstein
