- 1 Anaheim pepper, roughly chopped
- 3 Cloves Garlic, smashed +1 Clove, minced
- 1 1/4 teaspoons Kosher salt
- 1 teaspoon Freshly ground black pepper
- 1/4 cup Sour cream
- 1/2 teaspoon Adobo sauce from Chipotle Peppers
- 1/4 teaspoon Lime juice
- 2 cups Small Red Potatoes, unpeeled, cut into ½” dice
- 2 tablespoons Unsalted butter
- 1 Sweet Onion, cut into ½” dice
- 1 Chipotle Pepper from a jar in Adobo Sauce, minced
- 1/2 Red Bell Pepper, cut into ½” dice
- 1/2 Green Bell Pepper, cut into ½” dice
- 4 Slices of Thick Cut Bacon, cut into ½” pieces
- 1 cup Heavy cream
- 1 pound White Cheddar cheese, shredded
- 1/2 cup White popping corn
