14oz diced tomatoes(canned is fine, use chipotle or rotel, if you can!)
4oz good beer
Juice from 2 limes
2t worcestershire sauce
1/2-1t fresh ground black pepper
1-2t red pepper flakes
1t dry mustard
1t creole mustard
1t smoked paprika(or sweet or spicy, but then add a dash of liquid smoke)
1t dried oregano
1-3t louisiana hot sauce
3lbs preboiled crawfish(you want to do this like you do a crab boil... lots of seasonings in the water... you can do it ahead of time, up to 2 days, and keep refrigerated. i did mine this morning, then made the meal out of them for dinner) alternately, you can just use about 1/2lb of pre cooked crawfish meat
