  • 1 big slice of bread, toasted
  • One 5-oz can of tuna
  • 2 Tbsp mayonnaise
  • 2 Tbsp extra-virgin olive oil
  • 1 small shallot, chopped
  • 1/2 jalapeño, deseeded & chopped
  • 1 Tbsp capers, chopped
  • Salt & pepper
Instructions

Drain the water or oil from the tuna can, and add the tuna to a bowl. If you like the chunky kind, break it apart with a fork.

Add the chopped shallot, jalapeño, and capers.

Mix in the mayonnaise and olive oil, and season with salt & pepper (add hot sauce or green salsa if you like). Give it a good stir. 

If you happen to have a fresh lemon handy, squirt some lemon juice on the mixture to brighten it up a bit!

Toast your favorite bread to your favorite level of brownness and put everything together to make your Ridiculously Easy Gourmet Tuna Sandwich.
