

Heat oil in a heavy, large Dutch oven over medium heat.
Add eggplant, green bell peppers, tomatoes, onion, zucchini and basil.
Mix in vinegar; season to taste with salt and pepper.Preheat oven to 350 degrees.
Sprinkle with cheese, if desired.
