  • 2 chicken breasts, halved lengthwise
  • 1 egg
  • 12 saltines, finely crushed
  • 1 cup salsa
  • 1 cup Mexican-style finely-shredded four cheese blend
  • 2 tablespoons butter, melted
Instructions

Preheat oven to 425 degrees.

Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece. Pressing coating into chicken.

Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.

Bake 20 min. or until chicken is done (internal temperature should be 165F). Top with salsa and cheese; bake 5 min. or until cheese is melted.
