Season chicken with salt and pepper. In a heavy pan or wok heat the oil over medium/high heat. When oil is smoking add the chicken and let cook without touching for one minute.
Add red onion, red pepper, garlic and chili and mix together.
Let cook, stirring occasionally, for 3 minutes. In a small container, mix the apple juice and cornstarch until smooth and pour over chicken. Bring to a boil, turn off the heat and stir in grated "Xocai Omega Squares"- stir until chocolate is melted and serve.
Garnish with chopped cilantro.
