  • 4 eggs, beaten
  • 2 tablespoons half-and-half or milk
  • 1 tablespoon minced garlic
  • 1 package frozen spinach, thawed and drained well (Note: I use a large hand towel to absorb all of the excess moisture)
  • 1 small onion, chopped
  • 1 cup chopped basil
  • 1 cup shredded low fat cheddar cheese
  • 3/4 cup crumbled feta cheese
