Preheat oven to 400
Combine groundchicken, egg, 1/2 cup bread crumbs, seasonings and half of the chopped onion in a bowl. Shape into 6-8 patties.Coat in more bread crumbs.
Place on sheet pan.
Drizzle with Olive oil.
Add water, tomato paste, dates and sun dried tomato to a sauce pan over medium heat. Stir until fully combined.Bring to a boil. When the sauce starts to boil, reduce to simmer.
Add tomatoes, fresh herbs and seasonings. Simmer while chicken finishes.
Serve over whole wheat pasta OR as a burger!
