  • 5 small eggs
  • 375ml milk (3.5% fat)
  • a dash of salt
  • 37g unsalted butter
  • 8g vanilla sugar
  • 190g white flour
  • 1 Tbsp white sugar
Instructions

Separate eggs, yolks and whites each in a big bowl.

Put sugar, vanilla sugar, and salt in the bowl with the yolk and mix well.

Add 1 tablespoon of flour and a big sip of milk to the yolk mixture and stir well. Repeat this until all the flour and milk are blended in.

Clarify the butter in a large pan on low heat.

Beat the egg whites stiff.

Add the clarified butter to the egg yolk mixture.

Carefully lift the stiff egg whites under the egg yolk mixture until there are no chunks left. Do this carefully to not lose all the air, the mixture needs to stay fluffy.

Pour mixture into a preheated pan on medium heat. The pan size should be so big that when all the dough is in the pan, it is about 1cm thick.

Cook on low to medium heat for about 5-10 minutes. Then quarter the pancake and flip the pieces over. Wait another 3 to 5 minutes and then start chunking the dough into bite sized pieces while letting them crisp up in the pan.1

Add powder sugar and or apple sauce or any other sauce that you like.
