Ingredients
- For the pâte à choux:

- 1/2 cup (115 g) milk
- 4 tablespoons (56 g) unsalted butter
- 3/4 teaspoon salt
- 1 1/3 cups plus 2 tablespoons (170 g) bread flour
- 4 large (227 g) eggs (have 1 to 2 extra on hand!)
- oil, as needed for frying
- For the icing:
- 2 cups (226 g)confectioners' sugar
- 1/4 cup (60 g) heavy cream, plus more as needed
- 1/2 vanilla bean, scraped
- 1 pinch nutmeg (optional)
