- 2 Small shallots cut into quarters
- 2 Cloves of garlic smashed
- 1 Carrot
- 1 Celery stalk
- 1 Bay leaf
- 1 Poached egg or egg yolk
- 1 tablespoon Extra Virgin Olive oil
- 1 tablespoon Rendered fat from pancetta
- 1 tablespoon Red Wine vinegar
- 2 tablespoons Finely chopped Italian parsley
- Salt and black pepper to taste
