- 2 medium sized beets
- 40 grams feta cheese
- 2 tablespoons olive oil
- 1 small onion, finely sliced
- Sliced radishes (optional)
- Fresh spinach leaves or other salad greens (optional)
- For the dressing:
- 1 1/2 teaspoons dijon mustard
- 1 clove of garlic, minced
- 1 tablespoon red wine vinegar
- 1 1/2 teaspoons lime juice (or 2 tsp lemon juice)
- 2 tablespoons extra virgin olive oil
- Freshly grated black pepper
- Salt, to taste
