Ingredients
- 10 eggs
- 1 tbsp olive oil, plus extra for frying and drizzling
- 2 courgettes, finely chopped
- 3 spring onions, thinly sliced
- 4 roasted red peppers from a jar, drained and finely chopped
- 1 garlic clove, crushed
- 1 red chilli, deseeded and finely chopped
- 300g soft cheese, such as light Philadelphia
- 5-6 tbsp milk
- 4 tbsp snipped chive
- 2 tbsp chopped fresh basil
- rocket leaves and shaved Parmesan (or vegetarian alternative), to serve
