- 3 tablespoons of toasted pine nuts, roughly chopped
- 6 dried apricots
- Juice from one lemon
- 1-2 tablespoons of olive oil
- 1-2 tablespoons of panko bread crumbs
- 1 clove of garlic minced
- Flour for dredging
- Olive oil for frying
- Salt & pepper
