Hot Honey–Mustard Firecracker Hot Dogs

Ingredients

• Cooking spray
• 2 cups all-purpose flour (9 ounces; 260g)
• 2 teaspoons baking powder
• 1/2 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
• 1/2 cup (120ml) whole milk
• 2 tablespoons (30ml) hot honey (see notes)
• 8 tablespoons (113g) unsalted butter, cut into 1/2-inch cubes and chilled
• 2 tablespoons (30ml) hot honey
• 2 tablespoons (30ml) yellow mustard
• 1 1/2 teaspoons soy sauce
• 1/2-1 teaspoon sriracha sauce
• 1/2 teaspoon cornstarch
• 6-8 hot dogs (see notes)
