Ingredients
- 2 tbsp sunflower oil
- 1 large onion, peeled and cut into 2.5cm chunks
- 6 garlic cloves, finely chopped
- 1.2kg beef brisket, cut into 2.5cm cubes (remove sinew and excess fat)
- 4 medium potatoes (approx 450g), peeled and cut into 5cm chunks
- 1 large sweet potato (approx 250g), peeled and cut into 5cm chunks
- 2 parsnips (approx 225g), peeled and cut into 2cm chunks
- 225g carrots, peeled into 2cm chunks
- 400g can butter beans, drained and rinsed
- 400g can chickpeas, drained and rinsed
- 150g pearl barley
- 2 tbsp date syrup, or regular honey
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- 2 tbsp tomato purée
- 1 tsp onion granules
