Vegan Bean Chili!
Ingredients
- 1 med yellow onion, diced
- 6 white/brown mushrooms, diced
- 2 large carrots, diced
- 2 green bell peppers, diced
- 8 ounces can kidney beans, rinsed and drained
- 8 ounces can navy beans, rinsed and drained
- 16 ounces can black beans, rinsed and drained
- 3 large cloves garlic, minced
- 6 ounces can tomato paste
- 1 teaspoon cumin
- 1/2 teaspoon dry parsley
- 1/4 teaspoon chili powder
- 1/4 teaspoon red pepper flakes
- 1 teaspoon paprika
- 4-5 teaspoons vegetarian beef bouillon (optional)
- 1/4 teaspoon cilantro
- 1/4 teaspoon celery seed
- 1 piece bay leaf
- kosher salt
- freshly ground black pepper
- 4-5 cups water
- 1/2 teaspoon dry basil
- 1/2 teaspoon dry oregano
- 1/4 teaspoon cayenne pepper
- 5 green chili peppers
- olive oil
