Ingredients
- For the Pork:
- 1 (3/4 pound) pork tenderloin, trimmed of silver skin and excess fat
- Kosher salt and freshly ground black pepper
- 4 large garlic cloves, minced (about 2 tablespoons)
- 1/4 cup olive oil
- 2 tablespoons juice from 1 orange
- 1 tablespoon juice from 1 to 2 limes
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- For the Sandwiches:
- 4 tablespoons unsalted butter, softened
- 1 tablespoon yellow mustard
- 4 sweet rolls (see note above), split in half lengthwise
- 8 slices deli ham
- 32 dill or bread-and-butter pickle chips
- 8 thin slices Swiss cheese
