Ingredients
- 1 large cucumber - chopped
- 1/2 cup cherry tomatoes - cut in half or fourths
- 1/4 cup green onions -- green part only -- chopped
- 2-3 tablespoons good olive oil
- 1/2-1 lemon (depending on your taste)
- salt to taste
- pepper to taste
- 1 bunch parsley -- chopped
- 3/4 cup quinoa - cooked according to package directions
