Ingredients
  • 1/3 cup uncooked quinoa
  • 2 medium zucchini
  • ½ cup canned chickpeas, drained, rinsed and mashed (OR 2 tablespoons all-purpose flour)
  • 1/3 cup finely minced yellow onion
  • 3 cloves garlic, finely minced
  • 2 scallions, white and light green parts only, finely chopped
  • Zest of 1 small lemon
  • 2/3 cup crumbled feta or goat cheese (Feel free to use a full cup if you're into cheese.)
  • 1 large egg
  • ½ teaspoon kosher salt
  • ½ teaspoon coarse black pepper
  • ¾ cup non-fat Greek yogurt
  • 1 tablespoon chopped fresh dill
  • ½ teaspoon fresh lemon juice
  • 1 clove garlic, grated or very finely minced
