  • * 1/2 red bell pepper chopped
  • * 1/2 green bell pepper chopped
  • * 2 clove garlic minced
  • * jalapeno to taste i used pickled nacho jalapeno about 8 ring
  • * 15 oz can black bean drained and rinsed
  • * 15 oz can fire roasted tomato
  • * 2 tbl salsa
  • * 1 tsp chili powder
  • * 1/2 tsp ground cumin
  • * 1/4 tsp mexican oregano
  • * salt and pepper to taste
  • * 3/4 cup couscou quinoa would work too
  • * 1 cup low sodium vegetable broth
