Ingredients
- * small bunch of green onion chopped
- * 1/2 red bell pepper chopped
- * 1/2 green bell pepper chopped
- * 2 clove garlic minced
- * jalapeno to taste i used pickled nacho jalapeno about 8 ring
- * 15 oz can black bean drained and rinsed
- * 15 oz can fire roasted tomato
- * 2 tbl salsa
- * 1 tsp chili powder
- * 1/2 tsp ground cumin
- * 1/4 tsp mexican oregano
- * salt and pepper to taste
- * 3/4 cup couscou quinoa would work too
- * 1 cup low sodium vegetable broth
