- 2 green, unripe mangoes, peeled and sliced (2 cups)

- 1 (1-inch) piece ginger, peeled and cut into thin matchsticks
- 3 cloves garlic, cut into thin matchsticks
- 3 Tbsp coconut vinegar or white vinegar
- 1½ tsp salt
- 3 cups coconut milk
- 1 Tbsp coconut oil
- 1½ tsp black mustard seeds
- 4 dried red chiles, snapped in half
- 20 curry leaves
- Fried Onions for garnish (optional)
- Basmati Rice to serve
