Sweet Potato and Chorizo Frittata
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- ¼ cup scallions, chopped
- 2 medium sweet potatoes, par-baked, cooled and chopped (3-5 minutes in the microwave should work)
- 2 links of chorizo, chopped (approximately 1 cup)
- ½ cup olives, pitted
- 8 eggs
- 1 cup milk
- 1 cup Manchego cheese
- salt and peper
