Quinoa Pilaf with Curry Powder
Ingredients
- 1 cup Quinoa
- 2 cups water
- 1 large onion cut in half and sliced into thin semi circular slices
- 1 red bell pepper finely diced
- 1 green bell pepper , finely diced
- 1 - 1.5 teaspoons curry powder
- 1/4 teaspoon turmeric
- 1/4 - 1/2 teaspoons cayenne or paprika powder, as per taste
- 2-4 tablespoons Olive oil (dependign on how well done you want your onions)
- Salt to taste
- chopped Cilantro for garnish
- Lemon wedges for serving
- 1/2 cup Walnuts
