Turkey and Sugar Snap Peas in Orange Mustard Sauce

Ingredients

• For the sauce
• 1⁄2 cup orange juice
• 1 teaspoon orange zest
• 2 teaspoons fresh ginger, peeled and chopped
• 1 garlic clove, minced
• 1 shallot, finely chopped
• 2 teaspoons honey
• 1 teaspoon Dijon mustard
• For the marinade
• 1 egg white
• 1 tablespoon mirin or 1 tablespoon sake
• 2 teaspoons soy sauce
• 1 tablespoon cornstarch
• For the stirfry
• 1 lb turkey breast, cut into 1 1/2 cinch chunks
• 2 tablespoons vegetable oil
• 1⁄4 lb sugar snap pea
• 1 cup sliced water chestnuts, drained
