Ingredients
- 2 tablespoons olive oil
- 1 white onion, diced
- 2 carrots, diced
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bay leaf
- 1 can white beans, rinsed well - I used Navy beans
- 1/2 28 oz. can crushed tomatoes
- 1 cup vegetable stock, optional
- 1 14 oz. can diced tomatoes - I like the ones with onion and garlic but you can use fire roasted, plain, basil, etc.
- 1/2 green pepper, diced
- salt and pepper to taste
- several dashes of tobasco to taste
