- 1 1/2 cups carrots, diced
- 1 cup bell peppers or small sweet peppers, diced

- 2 teaspoons oregano
- 1/4 - 1/2 teaspoons crushed red pepper
- 1/2 cup red wine
- 2 teaspoons sugar, if needed
- 3 - 4 handfuls spinach
- basil, fresh
- salt & pepper
- 2 tablespoons olive oil
- goat cheese, for serving
