Tangy Spinach Souffle

- 1 tablespoon panko bread crumbs
- 1/2 cup finely grated parmesan cheese, plus more for sprinkling on the dish and on top (optional)
- 1 pound spinach, stems trimmed, steamed and roughly chopped. (or if, like me, you're short on time, you can use one 10-ounce package of organic frozen spinach, defrosted and well-drained. )
- 4 tablespoons butter
- 4 tablespoons flour
- 1 cup plain yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1 clove garlic, put through garlic press
- zest of one lemon
- juice of 1/2 lemon (about 2 tablespoons)
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh)
- 4 egg whites
- 1 pinch kosher salt
