Chocolate Zucchini Bread
Ingredients
- 4 cups grated zucchini (from about 1 1/2 pounds zucchini)
- 2 1/2 cups (340g) all-purpose flour
- 1/2 cup (50g) unsweetened cocoa (use natural unsweetened cocoa, not Dutch processed)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups (300g) sugar
- 2 eggs
- 3/4 cup (169g) unsalted butter , melted
- 1/2 teaspoon instant coffee granules
- 1/2 teaspoon almond extract
