- 9 1/2 ounces sugar (about 1 1/3 cups; 270g), plus 1 tablespoon (15g), divided
- 5 large eggs (275g)
- 2 yolks (30g) from 2 large eggs
- 8 ounces heavy cream (about 1 cup; 230g)
- 2 tablespoons (20g) all-purpose flour
- 2 teaspoons vanilla extract (10g; 10ml)
- 1 teaspoon (3g) Diamond Crystal kosher salt; for table salt use half as much by volume or the same weight
- Finely grated zest of 1 lemon (about 1 teaspoon; 5g)
