- 8 ounces dried apricots, quartered
- 8 ounces dried figs, quartered
- 3/4 cup bourbon
- 1 1/2 cups unsalted butter, room temperature
- 2 cups packed brown sugar
- 6 eggs
- 3 cups all purpose flour
- 1 1/4 teaspoons baking powder
- 1 1/4 teaspoons baking soda
- 3 teaspoons cinnamon
- 2 teaspoons salt
- 1/2 teaspoon ground nutmeg
- 1 teaspoon allspice
- 1 teaspoon cardamom
- 1 teaspoon grated lemon zest
- 1 cup mashed ripe bananas (approximately 3 bananas)
- 2 cups walnuts or pecans toasted and coarsely chopped
