  • 1 medium cucumber, diced
  • 1 small red onion, finely chopped
  • 1 tbsp fresh mint leaves, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1/4 tsp hot chilli pepper flakes
  • 1/4 tsp ground coriander
  • 1/4 tsp ground paprika
  • salt / pepper to taste
  • Dressing: 3 tbsp avocado oil & 2 tbsp lemon juice (or any dressing of your choice)
