Ingredients

• 1/3 cup black rice, cooked and cooled
• 1/3 cup frozen green peas, cooked and cooled
• 250 g white kidney beans, canned
• 3 medium tomatoes, diced
• 1 medium cucumber, diced
• 1 small red onion, finely chopped
• 1 tbsp fresh mint leaves, finely chopped
• 2 tbsp fresh parsley, finely chopped
• 1/4 tsp hot chilli pepper flakes
• 1/4 tsp ground coriander
• 1/4 tsp ground paprika
• salt / pepper to taste
• Dressing: 3 tbsp avocado oil & 2 tbsp lemon juice (or any dressing of your choice)
