- 3 tbsp. coconut milk
- 2 1/2 tbsp. fish sauce
- 1/2 tbsp. chili powder
- 1/3 tsp. cumin (ground)
- 1/4 tsp. coriander (ground)
- 1/2 tsp. brown sugar
- 1/2 cup bread crumbs
- 6 makrut lime leaves (cut into thin strips, or 1/2 tsp. grated lime zest )
- 2 green onions (thinly sliced)
- 1 inch-sized knob galangal (or ginger, grated)
- 3 garlic cloves
- 1 red chili (minced, or 1/8 to 1/4 tsp. dried crushed chili)
- 1 to 2 tbsp. oil for high-temperature frying (such as peanut oil )
