- 4 cups grated carrots
- 4 cups grated Cheddar cheese
- 4 cups chopped celery
- 4 cups fresh, tiny shrimp
- 1 cup chopped green onion
- 2 cups of mayonnaise
- 1 and 1/2-ounce can shoestring potatoes, or 1 3-ounce can chow mein lettuce leaves
- chopped parsley for garnish
